The Triticum Monococcum, or small spelled, is considered the first cereal “acclimated” by man around 7500 BC, in the Middle East.
It has less gluten than wheat, but is very energetic and rich in substances that fight free radicals, such as phosphorus and potassium. It is a grain of great and fine quality, because it is the result of small agricultural productions. It costs a little more, because it is less widespread and does not undergo intensive processes. But you can be sure you’re eating a flour (and a pizza) really healthy and genuine.

The Antico Molino Rosso is located in the Po valley, in the province of Verona. Since 1990, it has produced only organic flours with stone grinding, completely traceable. The organic monococcum spelled flour is the flagship of an experimental project, which produces eight varieties of ancient cereals every year. This semi-wholemeal flour preserves unaltered all the nutritive properties of spelled, in this way you will rediscover ancient flavors by eating a pizza prepared with the most modern dough techniques.
